BANANA BREAD WITHOUT BUTTER

 

I love banana bread ! It’s one of mine comfort food. I have been perfecting banana bread recipe and I make moist, sweet banana bread without butter. That I want to share with you.

 

Only the frosting has butter – or cream cheese – you can always skip this part .

Beat the egg and sugar in a large bowl. Add mashed banana and yogurt, beat until smooth.
Slowly add the flour, semolina, cinnamon, vanilla, baking powder, baking soda, salt and stir until completely incorporated.
Gently fold walnuts in.
Pour batter into a greased pan and smooth top with a spatula. Bake the pan in a preheated oven for 45-50 minutes – or until a toothpick inserted in the middle comes out clean.

Gently fold walnuts in.
Pour batter into a greased pan and smooth top with a spatula. Bake the pan in a preheated oven for 45-50 minutes – or until a toothpick inserted in the middle comes out clean.

Allow to cool completely in the pan before turning the pan over on top of a plate to remove the cake. The cake should slip out with little effort.
; Make cinnamon frosting;
In a bowl using a hand mixer, beat cream cheese – or butter – until smooth. Add powder sugar, walnuts and cinnamon, beat until fluffy.

Once banana bread cool, frost bread, slice and serve.
